INGREDIENTS:

• 4 cups Vegetable broth

• 1 cup unsweetened Coconut milk

• 6 cups canned Pumpkin

• 2 cups sliced onions sautéed

• 8 cloves garlic roasted

• 2 teaspoons ground paprika

• 1 teaspoon cayenne pepper

• 2 teaspoons freshly grated Nutmeg

• kosher salt to taste

• freshly ground Black pepper to taste

• balsamic vinegar to garnish

• toasted Pumpkin seed to garnish

• fresh Basil to garnish

DIRECTIONS:

Combine all ingredients into a food processor or blender. Mix until smooth, about 5-8 minutes. Pour into pot, cook

for 4 - 5 minutes until heated through. Pour into individual soup bowls and garnish as desired.
